The Truth About Preparing Tasty Tofu
First of all, let me assure you that not all tofu is created equal. The most widely available tofu is ‘tub tofu’ that comes in a plastic tub with water. Make sure you purchase extra firm if you buy tub tofu. This kind of tofu tastes best if you drain it, rinse it and then squeeze the water out of it before cooking with it. I usually unwrap the tofu, drain and rinse it, set it on a plate, put a plastic lid on top, and set a gallon of milk on top of the lid. The weight of the jug of milk will squeeze out the remaining liquid (it takes about an hour to get most of the water out).
If ‘brick tofu’ is available in your area, it is easier to work with and doesn’t require the squeezing process to make it tasty. ‘Brick tofu’ is super-firm and comes shrink-wrapped with no water. I use this kind of tofu whenever possible because I can shred it like cheese, grill it with ease, and don’t have to waste time squeezing water out of it.
In order to prepare tasty tofu, you have to give it time to absorb the flavors. Let it marinate, grill or fry it slowly, and give it time to take on the delicious flavors.
So, is Tofu Bad for You?
Some of you may wonder if tofu is even good for you. Like everything, balance plays a key role, as does how far removed from their original source a soy product is. We don’t munch on tofu on a daily basis. Not even a weekly basis. I have developed a fondness for soy, decaf lattes, though, so that’s what I prepare at home.
I’ve tried this recipe with my carnivore crowd, and they all like it, ‘even if it’s tofu.’ Remember, tofu will never have the same texture as real scrambled eggs or chicken. There are other soy products that mimic real meat, but tofu isn’t one of them. Never try to pass tofu off as ‘scrambled eggs’ to anyone. Trust me, they’ll know you’re lying.Print
Make sure you give the tofu time to absorb the flavors before you grill it!
2 teaspoons Adobo seasoning
1 teaspoon salt
1/2 teaspoon cayenne
1 teaspoon oregano
2 Tablespoons nutritional yeast
2 Tablespoons olive oil
3 Tablespoons lemon juice, freshly squeezed
2 tubs of tofu
Prepare tofu (if it’s the tub tofu variety) and then slice it into 1 centimeter-thick slices.
Mix the remaining ingredients in a large plastic bag with a zipper.
Put the tofu slices in the bad, zip it closed, shake to cover all the surfaces, and let it marinate for at least an hour. The longer the better.
Lay the pieces on your George Forman grill (or on a cookie sheet) and grill them on low (bake them at 325˚) until nicely browned.
Use them like you would grilled chicken strips in salads, on sandwiches, or eat them plain.
